Cucumbers
I am literally drowning in these right now. They are growing faster than I can do things with them. A half bushel a day is just too many cucumbers.
I've dumped them off with neighbors and have now resorted to letting them grow out to burger chip size then splitting them in half and throwing out to the geese.
I'm very popular with the geese these days.
I've got a new batch of chevre so I think I may try cucumber and goat cheese sandwiches on wheat toast. They might be good in an antipasto with some olives and feta with olive oil.

Mmmm....my mom used to make pickled cucumbers - thick slices of cucumber in a large mason jar. I remember raiding the fridge!

Used to have a neighbor who'd bring over several jars of homemade pickles each year. She made several varieties, but the sweet-hot were my favorite. the family would pretty much eat them straight from the jar until they were gone. No factory pickle has ever come close.

I love Cukes. I had a veggie sandwich yesterday from Panera Bread....with Cukes and Feta Cheese, red onion, a little lettuce, peppers...the bread was a tomato/basil....mmmmmmmmm. Rosie, your photos always make me hungry.

they are very good for your skin - some nights when my eyes are tired (from too much staring at the monitor) I put cuke slices over them before going to bed - then I eat them.
